The Ltfitness kitchen as gone green tonight with this great lunch idea which doesn’t sound delicious but trust me, it is.
Asparagus is slowly becoming one of my fav veggies as it has so many health benefits. It’s full of vitamins A,C,E,K and B6 as well as iron, calcium, and protein. Also contains soluble and insoluble fiber which is great if you’re trying to lose weight as it keeps you full for longer but also helps with bloatiness.
Enough with the science and healthy bits- here’s the recipe:

  1. Heat 25g butter in a large saucepan and fry gently 350g asparagus tips, 1 chopped onion, 2 chopped garlic cloves for 10-15 mins until soft and golden.
  2. Add 2 large handfuls of spinach and 700ml of vegetable stock and season.
  3. Bring to the boil and simmer for 5 mins.
  4. Mix it all together with a hand blender until smooth and serve.**Warning- your wee will smellūü§£ūü§£**
